Method
- Heat the vegetable oil in a large skillet over high heat. Add half the prawns and sear for about 45 seconds on each side until golden, then remove to a bowl. Repeat with the remaining prawns.
- Remove the skillet from the heat briefly and reduce the heat to medium.
- Return the skillet to the stove and heat the sesame oil.
- Add garlic, ginger and chilli flakes. Cook until the garlic turns golden.
- Add the water, sriracha, soy sauce and brown sugar. Stir, increase the heat to medium-high and simmer for about 3 minutes, or until the sauce thickens to a light syrup consistency.
- Add the broccoli and snow peas and cook until just tender.
- Return the prawns and Hokkien noodles to the skillet. Toss to coat and cook for 1–2 minutes, until heated through and the sauce coats everything well.
- Garnish with sesame seeds, fresh chilli and shallots if desired.
