Teriyaki Salmon with Soba Noodles & Greens

Method

  1. Place a saucepan of water on to boil.
  2. Place salmon fillets in a bowl with olive oil, salt and pepper. Set aside at room temperature.
  3. Trim the broccolini and cut into thirds. Remove strings from the sugar snap peas. Measure the edamame and peel and finely grate the garlic.
  4. Cook the soba noodles in boiling water for about 4 minutes, or according to packet instructions. Drain and toss with a few drops of olive oil to prevent sticking.
  5. In a separate saucepan combine water, soy sauce, brown sugar, cornflour, honey, garlic and ground ginger. Bring to the boil, then reduce to a simmer for 5 minutes or until thick. Remove from the heat.
  6. Heat a large frying pan over medium-high heat. Add the salmon and cook for 1–2 minutes on each side, until all four sides are cooked. Remove from the pan.
  7. Reduce heat to medium and add broccolini, sugar snap peas and edamame. Cook for about 2 minutes or until bright green.
  8. Add the soba noodles and gently combine. Return the salmon to the pan and drizzle over as much teriyaki sauce as desired. Sprinkle with sesame seeds and serve.
