Step by step
Method
- Place a saucepan of water on to boil.
- Place salmon fillets in a bowl with olive oil, salt and pepper. Set aside at room temperature.
- Trim the broccolini and cut into thirds. Remove strings from the sugar snap peas. Measure the edamame and peel and finely grate the garlic.
- Cook the soba noodles in boiling water for about 4 minutes, or according to packet instructions. Drain and toss with a few drops of olive oil to prevent sticking.
- In a separate saucepan combine water, soy sauce, brown sugar, cornflour, honey, garlic and ground ginger. Bring to the boil, then reduce to a simmer for 5 minutes or until thick. Remove from the heat.
- Heat a large frying pan over medium-high heat. Add the salmon and cook for 1–2 minutes on each side, until all four sides are cooked. Remove from the pan.
- Reduce heat to medium and add broccolini, sugar snap peas and edamame. Cook for about 2 minutes or until bright green.
- Add the soba noodles and gently combine. Return the salmon to the pan and drizzle over as much teriyaki sauce as desired. Sprinkle with sesame seeds and serve.
